This is my own recipe, adapted after years and years of baking. I am basically lazy so that if I can bake up a tasty treat quickly, without the tedium of looking up ingredients, I am a happy camper… and that is why I use my own recipes.
This is a perfect recipe for sharing with your kids and incorporating into a homeschooling morning in the kitchen!
Harvest Apple Cake
Mix Dry Ingredients:
- 3 cups Flour (it doesn’t matter what kind, just use the kind you have in the pantry)
- 1 tablespoon Cinnamon
- 1 tablespoon Allspice
- 1 teaspoon Salt
- 1 tablespoon Baking Powder
- 1 teaspoon Baking Soda
Make a well in the Dry Ingredients and Add:
- 1/2 cup veg. oil
- 1/2 cup milk (you could use water just as easily)
- 3 large eggs (from your chickens are best, after all why bother homeschooling if you don’t have chickens along with the package?!)
Mix well and then dump in:
- 2 large apples, peeled and roughly diced (from your garden is best)
- Pour into a pan (I use a rectangular baking dish lined with parchment paper, usually paper I used previously to bake cookies because I am all about squeezing ever last little ounce of value out of everything).
Then sprinkle on:
- 1/4 cup mini caramel bits (optional but totally delicious, especially when the cake is warm and the itty-bitty pieces of caramel are gooey)
- Push the caramel bits into the batter with a knife so that they will sink into the batter instead of melting on the top.
Bake in the oven at 350 degrees for 30 to 40 minutes. It is ready when you can smell delicious apple cake in the house and the neighbors line up at the front door with plate and fork in hand.
